David Birzon began his restaurant career after college in Aspen, CO where he skied during the day and was a prep cook and baker at night. After completing his MBA and interviewing for “regular” jobs, he decided that the restaurant business would afford him the best opportunity to achieve his career goal of creating a work environment that focused on people and serving others. In 1991, David joined the founders of Paradise Bakery and built a brand known nationally for its strong culture and industry leading economics. When Paradise Bakery sold in 2007, they had over 80 restaurants and 3500 employees. In 2011, David set about to find a restaurant business that “could change the world.” That restaurant is Snooze, an AM Eatery. Snooze seeks to evolve the A.M. dining experience through culinary innovation, an eclectic and energetic atmosphere and comfortable and friendly service. More importantly, Snooze has become an industry leader in responsibly sourced food, sustainability and community. Snooze recycles and composts over 90% of its waste where facilities exist and gives back 1% of sales in in-kind donations in the communities in which they are located. Snooze is currently growing at over 40% per year and operates restaurants in 4 states (with more to come!). By the end of 2018, Snooze will have opened its 30th restaurant and will have hired its 1500th the employee.
